Vegetable Cheese Soup I

A hearty, healthy and zesty vegetarian soup! However, if you like meat in your soup change the vegetable broth to chicken broth and throw in some cut up chicken.

Potatoes, onion, celery, and seasonings are cooked until soft. Creamy cheese soup and cream are stirred in, creating this smooth mellow soup.

Cauliflower and White Cheddar Cheese Soup

A nice big soup pot begins this process. Cauliflower is cooked until tender in a vegetable broth with a smattering of nutmeg. Then this flavorful soup is pureed in the blender and heated again with milk and lots of cheddar cheese stirred in.

A rich potato soup that also has carrot, onion and celery. The chicken base also contributes to it's complex flavor. Chicken base is a strong reduction of chicken stock that is normally sold in a resealable plastic jar and should be kept refrigerated.

Vegetable broth is the base for this wonderful soup. And yes, there are lots of potatoes. Swiss cheese is added at the last minute, so that it gently melts into this hearty soup. Very, very good.

Cubes of processed cheese are stirred into slices of sausage and potatoes cooked in chicken broth to create a thick soup which is thinned to the desired consistency with evaporated milk. 

Creamy Tomato And Cream Cheese Soup
