Cheese Sauce Over Cauliflower

1 large head cauliflower
1 1/2 teaspoons salt
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon dried thyme
1 1/2 cups milk
1 1/2 cups shredded Cheddar cheese
Paprika
Minced fresh parsley

DIRECTIONS
In a large saucepan, bring 1 in. of water, cauliflower and salt to a boil. Reduce heat; cover and cook for 5-15 minutes or until cauliflower is crisp-tender.
Meanwhile, in a small saucepan, melt butter; stir in flour and thyme until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese, stirring until melted.
Drain and pat cauliflower dry; place on a serving platter. Top with cheese sauce; sprinkle with paprika and parsley. Cut into wedges.

I used this sauce over broccoli - delicious and very easy to prepare. I poured the rest of the sauce over the remaining broccoli and reheated it this afternoon - it may have even been better the second day. Thanks for this one!

An excellent recipe for cheese sauce. This could be great with other vegetables as well. We cut the cauliflower and steamed it rather than boil it as we prefer steamed vegetables. It was wonderful.

This is a very nice side dish. I added a little garlic salt to the cheese mixture after tasting it, I just love the garlic flavor with most all vegetables. I cut the cauliflower into wedges before topping with the sauce. For my family the cauliflower was just a bit firm so after topping with the sauce I put it in a 375 degree oven for 20 minutes and it came out beautifully.

Family favourite -- but don't serve it like the picture. Break the cauli into little bouquets so every one gets lots of yummy cheese sauce on it. We used 1 tsp dry mustard instead of thyme (kids don't like thyme).

I thought this sauce was great. My husband and I love the Loaded Fries at Connie's Pizza. I've tried numbers of times to reproduce this with premade cheese (CheezWhiz, Nacho cheese sauce) and none have tasted as good as I'd hoped. I gave it a shot with this sauce and it was fantastic! I added some salt to the recipe, but otherwise, I made it as called for. Loved it!!!

This was a very good cheese sauce. I did think it could have used some salt. I ended up using a seasoning blend to taste. The consistency was excellent. My kids gobbled up their cauliflower and asked for more. Thanks a lot~

This was the first cheese sauce I have ever made and it was very easy. It was good but not great. I think it needs garlic and a little tweaking. Great base recipe.
