INGREDIENTS
1 cup butter or margarine, softened
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups shredded sharp Cheddar cheese
3 cups crisp rice cereal

DIRECTIONS
In a mixing bowl, cream the butter until fluffy. Slowly mix in the flour, salt and cayenne pepper. Stir in cheese and cereal. Shape into 1-1/2-in. balls and place on ungreased baking sheets. Bake at 350 degrees F for 15-17 minutes or until lightly browned. Serve warm or cold.

I thought this was an excellent base recipe. i gave it four of five as i intend to change it a bit next time. as is, it is a little too floury. next time i will cut back just a bit. hand-grated cheese is a must and i plan to double the cayenne. will definitely make again

I'm sorry, but this was really bad. A friend of mine made them, and they tasted like Velveeta meets rice crispies, which essentially, they are- ended up tasting kind of like sawdust.

My cheese crisps came out kinda chewy... Maybe it was just me. But, I don't agree with the prep time. Unless you are the fastest at rolling up the little balls, I guess. It took me 10 minutes to do that part alone. And what does this recipe consider a serving? It says it yields 12. It would have been more helpful to me to know how many it made individually so I could prepare beforehand.
