Cheese Biscuits
SUBMITTED BY:
Mary Lewis
"'THE BREAD at this meal sometimes varied, but we loved Mother's cheese biscuits best. Although the biscuit bowl was always filled to the top, there never seemed to be enough. The cheese gives these biscuits an unforgettable flavor, and buttermilk makes them especially light.'"

DIRECTIONS
In a mixing bowl, combine flour, baking powder, salt and baking soda. Cut in shortening until the mixture resembles coarse crumbs. Stir in cheese. Add buttermilk; stir just until dough clings together. On a lightly floured surface, knead dough lightly until easy to handle. Roll into a 12-in. circle. Cut into eight wedges. Begin at wide end of wedge and roll toward point. Place biscuits, point side down, on a greased baking sheet. Bake at 450 degrees F for 12-14 minutes or until golden brown. Serve warm.

I really liked this recipe! I did make some changes. I used my bread machine to mix the dough, and trade 1 tsp. of bkgpwdr for yeast. I also used butter instead of shortening. Thanks for the post! PS Reduced temp. to 400.

I absolutely love this recipe! It is so easy to make. I've also tried it with some dill or onion added to the dough, and it turns out very nice. To save time, I don't bother rolling them out into the "croissant" shape, I just form the dough into a square and cut into pieces. Thank you so much for the recipe!

Great tasting my kids loved them. I did cut in more than 8 wedges so that I had smaller ones rather than 8 larger ones. Super easy to make.

I've made these several times. It's a good basic and easy recipe, but I will agree that it is rather bland as is. Throw in some seasoning of your choice and see what happens! :)

I followed the recipe exactly (once it had been scaled down to 6 servings). They weren't bad, just really bland. Maybe some of the other reviewers' suggestions (such as garlic) would help.

Did not have baking powder so they came out really heavy and amazing. I honesty would suggest doing this, but it only makes 6 biscuits, so if you need more plan for it. I also through in some garlic which rreally added to the flavor

My kids & husband gobbled these up. They were good and moist; I think the buttermilk is the key to the moisture.
