3 eggs, lightly beaten

2 1/2 cups all-purpose flour

2 cups grated carrots

1 1/2 cups flaked coconut

1 cup sugar

1/2 cup milk

1/2 cup vegetable oil

1 teaspoon baking powder

1 teaspoon baking soda

1/2 cup maraschino cherries
DIRECTIONS

In a mixing bowl, combine the first nine ingredients; mix well. Fold in cherries. Spoon into three greased 7-1/2-in. x 3-3/4-in. x 2-1/4-in. loaf pans. Bake at 350 degrees F for 40-45 minutes or until bread tests done.
