Very good pot pie. I made this tonight because I needed something I could just whip together, throw in the oven and forget about. Normally I make a pastry crust for my pot pies but I didn't have time to make the dough. I used Krusteaz pancake mix and it made a thick crust. Almost too thick. I also added two potatoes, corn and peas but left out the broccoli. I really enjoyed the flavour of the cream cheese! I asked my husband what I should rate this recipe as and he said 4 and a half. Since I can't do that I will rate it a 4. Definitely worth making!! Will make again.

We really liked this. These were the changes I made. My chicken was not cooked so I cubbed some breasts and seasoned with Old Bay and pepper. I browned it in a little olive oil and added one clove garlic at the end. For the cheese mixture, the only change I made was sautee some finely minced onion in a very small amount of butter prior to adding other ingredients. We don't care for cooked veggies so we had them as a side dish instead of in the cassarole.

If you're looking for a good, basic chicken pot pie recipe, this is a great choice. I changed the veggies up a bit according to what I had on hand (frozen mixed veggies, frozen peas, and potatoes). And because I like my veggies soft, I cooked them in the saucepan for longer than specified (until my desired softness). Also, this recipe doesn't specify what seasonings to use, but it definitely needs some deeper flavors. So I added extra chopped onion and a couple cloves of garlic, as well as salt, pepper, sage, rosemary, and parsley. In the end, the top "crust" baked up fluffy and biscuit-like. Twenty minutes in the oven was just perfect. Thanks for the recipe, Vicki!

This was good, but not as good as I had hoped. I did add a few diced potatoes, extra onions & mushrooms to it. But we still felt like it was missing something...?

This was very good and my most of my kids liked it;) The other ones don't like broccoli...I made a homemade version of the cream of chicken soup and I used a homemade pancake mix. Thats pretty much the only thing I did differently. The taste was wonderful!
