INGREDIENTS
1 medium onion, chopped
1/4 cup butter
2 1/2 cups biscuit/baking mix
1 tablespoon minced fresh parsley
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
3 eggs, beaten
1/4 cup milk
1 1/2 cups shredded zucchini
1 cup shredded Cheddar cheese
3/4 cup chopped almonds, toasted

DIRECTIONS
In a skillet, saute onion in butter until tender.
In a bowl, combine the biscuit mix, parsley, basil, thyme and onion mixture. Stir in eggs and milk just until combined. Fold in the zucchini, cheese and almonds.
Transfer to a greased 9-in. round baking pan. Bake at 400 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cut into wedges.

I used whole wheat baking mix to make this zuccini cheddar bread. The cooking time was the same when using a 9x9 pan.

I found this to be very bland. I agree, bacon would add to it, but it also needs a little salt or some other seasoning. Would not make again.

I've been on a zucchini mission lately making many recipes calling for this wonderful over-abundant prolific garden item. I have to admit this is not one of my favorite. I used toasted slivered almonds and can't say I liked them in this dish. I agree with another reviewer that bacon would probably be a nice addition. It was good, just so many other ways I prefer to use zucchini. I will probably not make this again.

Great addition/substitute: Bacon! Absolutely delicious, best zucchini recipe I've found on this site. I didn't have cheddar, so I used Huntsman (sort of like a cheddar with a blue cheese, layered) which was perfect for this. I do wish I had chopped the almonds a little more finely, mine were in very large chunks. I also recommend substituting small pieces of bacon for the almonds!
