taste was good but i would recommend waiting to put the cheese on. mine got a little hard. other than that it was delish!

Yum! And I haven't even finished the recipe yet! I boiled the potatoes, drained them, put them in my stand mixer with the other ingredients (sans cheese, bacon and chives as per family preference), and mixed it all up. We would LOVE to eat it as is, but...Easter is tomorrow and that's what it's for. I know it will just as good baked. I was looking for a make ahead basic mashed potato recipe, and this is perfect. I've always just eyeballed adding butter, milk and salt as I saw my grandma do, but it's nice to have an actual recipe. I like the sour cream over milk, too. Thanks!

Absolutely delicious and flavorful! I added green onion instead of chives and didn't use bacon because I didn't have any. The sour cream made these so creamy--my boyfriend loved them!

This is one of the best versions of mashed potatoes! I love it. The second time I made it, I left the skins on, added garlic, and mixed the cheese in as well as added some on top with the bacon. Also, I used sour cream with onion and chives mixed in, and it is just fantastic. I served it with meatloaf, and it was a big hit!

It is so easy and tasteful. I have done it again and again because it tastes so good. Now, I have tried to add fresh corn to it. I use whole corn cob, boil it for 10 minutes. Then cut the corn kernels out and mix the corn into the mashed potato. Instead of putting the bacon on top, I also mix half of the bacon into the mashed potato and put the remaining on the surface as the recipe instruct to. It comes out even more tasteful, with the bacon and corn mixed with the potato. And it is delightful with some chewy corn in it too.

Did mine without the bacon, used a little bit of milk when mashing and left the skins on the potatoes. Came out great.

Made this for xmas eve dinner for my boyfriend and his son... SOOOOO good. I made enough to serve 6 or 7 but everyone loved them so much they were gone in a flash!

Excellent recipe. I made this for the first time for the Christmas meal, but I added some milk while mashing the potatoes and it kept it nice and moist after baking. It was a huge hit with the family, and will be sure to make this again.
