INGREDIENTS
8 medium potatoes, peeled and cubed
1/2 cup sour cream
1/3 cup butter or margarine, softened
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese
2 bacon strips, cooked and crumbled
1 teaspoon minced chives

DIRECTIONS
Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat. Cook for 15-20 minutes or until tender. Drain and mash. Add sour cream, butter, salt and pepper; beat until smooth and fluffy.
Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheese, bacon and chives if desired. Bake, uncovered, at 325 degrees F for 20 minutes or until heated through and cheese is melted.

These were really good and flavorful! Very creamy! I made exactly as written, but used garlic pepper and skipped the baking in the oven..... I just mixed the cheese right in and crumbled the bacon on top (skipped chives too). Will make again! Thanks!

wow wow wow....bacon, cheese, sour cream, how can you go wrong? I couldn't believe this recipe didn't call for milk, but it certainly doesn't need it! I followed the recipe, w/the addition of minced garlic. I blended the bacon (Hormel real bacon bits...I took the easy route), cheese, chives, and garlic when i mashed the potatoes and splashed some on top for garnish prior to rebaking. My husband said they are the best he ever tasted. I used all fat-free/low fat foods and the taste wasn't affected at all....This will get a lot of use at our house! UPDATE: I just made these again for the first time in months and I forgot just how awesome they are! I know it's hard to not use milk making mashed potatoes, but trust me, you don't need it!

This was my first time EVER making mashed potatoes and they turned out pretty well! I used this recipe as a guide, making a smaller portion and using healthier alternatives. I used 5 small potatoes, approx. 3 tbsp. light sour cream, about 1-2 tbsp. butter substitute, some fresh pepper, and added 1/4 tsp. of garlic salt. I sprinkled a little shredded cheddar (made with 2% milk) on top before baking. Did not use chives or bacon and the potatoes still turned out very yummy! Next time I will add a little milk though. Thanks for sharing this recipe! :)

my potatoes turned out very creamy and yummy! although I don't think it's necessary to cook in the oven that long, all you need is to melt the cheese on top and they will be good to go. they taste like a big baked potato, although a lot more work that a baked potato...but it is still a good recipe, especially for a group of people. I will most likely make these for our family gatherings. Thanks!

I made this for our Easter, family dinner and everyone raved about it. The only thing I changed was instead of the chives (that I forgot to pick up)I chopped some red onion up fine and added it to the potatoes yummm! I will make this again for sure and I know my family will be making it too. Thank you.

Adding more bacon and cheese than called for makes this dissapear at potlucks. I use 8-12 strips of bacon and a cup of cheddar on top, as well as mix another cup of cheddar into the potatoes. And it is AMAZING!
