Very good. Flavorful. I used frozen O'Brien potatoes so I skipped the onion and peppers. I did sprinkle a little onion powder into the egg mixture and used sliced cheese sharp cheddar flavor. This would be perfect to wrap in a flour tortilla as a breakfast taco. Salsa was a great condiment for this. Thanks for the great omelet recipe!

A good hearty easy enough breakfast. Made as is with no changes. I love to make omelets, they're very easy for me; but, this one is a full one and hard to fold. Nevertheless, will make again when ham is on hand. Thanks for the post!

Easy and tasty! Check the serving size though. I broke this down into 3 smaller omelets instead of one giant omelet.

I made this spur of the moment so needed to do a little improvising. Didn't have hash browns, so used frozen french fries. Just chopped them up. Used breakfast sausage instead of polish sausage. Left out green pepper. My husband loved this-went back to finish it off. The kids (12,9) were not crazy about it but didn't expect them to be. I loved!

Wow!!! This is so easy to make and absolutely the best. We used ham and swiss on half and bacon cheddar on the other with mushrooms, of course. Wonderful...will definitely use again. It's now a favorite Sunday staple. Thanks for sharing

I halved this recipe, used hash brown potatoes with onion and peppers already in the mix, replaced the sausage with turkey sausage and used egg beaters in place of the eggs. I don't seem to have good luck making omelets (they always end up sticking and become scrambled eggs). That being said, I sauteed the sausage and hash brown mix (not thawed) in the pan. I removed from pan and set aside. Added eggs and cooked through, then removed from pan. I served the sausage and potato mixture layered inside the omelet before folding in half. Sprinkled some of the cheese on the inside and on top.

Excellent recipe. I omitted the bell pepper (hate them!) and substituted two tablespoons of diced green chiles.
