3 cups shredded Cheddar cheese, divided
1 (10 ounce) package frozen chopped broccoli, thawed and drained
1 1/2 cups cubed cooked chicken
2/3 cup finely chopped onion
1 1/3 cups milk
3 eggs
3/4 cup biscuit baking mix
3/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
In a bowl, combine 2 cups cheese, broccoli, chicken and onion; spread into a greased 10-in. pie plate. In a small mixing bowl, beat the milk, eggs, biscuit mix, salt and pepper until smooth. Pour over broccoli mixture (do not stir).
Bake at 400 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean. Sprinkle with the remaining cheese. Let stand for 5 minutes or until cheese is melted.

I must say that I didn't realize what the consistency of this would be when I read the recipe. It is very eggy and soft - very much like a thick breakfast casserole yet without the bread to make it firm. My husband liked it but I couldn't eat it because of the texture. I would not make this again. The flavor of the crunchy part was good but I couldn't get around the very soft texture. I would imagine it could be altered to make it firmer (less milk or add bread) but I'm not willing to make that effort to try.

Very easy and tasty. I love the combo of cheese and onion. I did cook the chicken in some garlic and paprika. I used fresh broccoli instead of frozen (I boiled it some before putting in the dish). The leftovers are fantastic too! I didn't need the full cup of cheese on top but that is personal preference.

My family loves this pie. I cook it for 45 min instead of 30 and add garlic and a bit more salt. A salad is a perfect compliment for this.
