INGREDIENTS
24 (3/4 inch thick) slices French bread
2 medium tomatoes, seeded and chopped
2/3 cup shredded Cheddar cheese
1/3 cup mayonnaise
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon pepper

DIRECTIONS
Place bread slices on ungreased baking sheets. Bake at 350 degrees F for 5 minutes on each side or until toasted. Meanwhile, in a small bowl, combine the remaining ingredients. Spread over toasted bread. Bake 8-10 minutes longer or until bubbly. Serve warm.

Nutritional Analysis: 2 pieces (prepared with reduced-fat cheese and reduced-fat mayonnaise) equals 115 calories, 3 g fat (1 g saturated fat), 4 mg cholesterol, 258 mg sodium, 18 g carbohydrate, 1 g fiber, 4 g protein. Diabetic Exchanges: 1 starch, 1/2 fat.

Great recipe! Delicious and easy to prepare. I added 1/2 tsp of garlic powder for a little more flavor. A definite crowd pleaser.

I made these for my sister's going away party and everyone loved them! At the start of the night, when they were still warm and later after they had cooled off. People were munching on them all night.

I added a teaspoon of garlic powder, mixed in some chopped green onions, a pinch of dried red peppers (the ones that usually come with pizza, haha) drizzle in some balsamic vinegar (red, white, doesn't matter) and then topped it off with some extra left over chopped green onion. The green onion and balsamic vinegar gave the bruschetta mixing a little more 'zing!'. So if you're looking for that, this is it. Very delicious. :]

WOW! Another reviewer mentioned her guests enjoyed these cold. How many did she have to make for them to last that long???? I used 2% cheese and lite mayo and added 1 tsp of garlic powder to a double batch. They were gone in 5 min. Next time I will quadruple the recipe.

This is soo easy to prepare and make. And so yummy! I added the garlic powder like others suggested. :) Will definitely be making again!
