I used chicken instead of beef, a mix of wild and brown rice, and made my own taco seasoning (from allrecipes). Otherwise I followed the directions and the meal was wonderful. My husband didn't speak the entire time because he was too busy eating. I think I had more rice than what was called for, but it worked really well. I served with a side of corn and salad and my husband ended up putting his corn on his enchilada. He was more than happy to have left overs for today. We'll make this one a regular in our house. Thanks for the recipe.

This was great. I added some scallions after I drained the beef. I also used Salsa Verde condensed soup rather than chicken and it really added a great kick. Great easy recipe. Thanks!

Excellent. I used 2 chicken breasts, cooked in the slow cooker with 2 cups of water and taco seasoning, shredded, along with the rice. I also added an extra can of cream of chicken soup, just because I like it SAUCY:) It made 1-9x13" pan and 1-8x8 for 14 enchiladas, total. Wonderful to enjoy today and know we've got dinner for another night.

This was quite good. The only change I made was to use black beans instead of refried beans. We liked it a lot. I love the fact that I've got a dinner ready for next week too! One can of black beans made 10 enchiladas for me and I still had enough meat filling for 4 more tortillas. Nice bonus!

Everyone loved it! Added some mozzarella cheese and used black beans instead or refried beans in half of the enchiladas. Leftovers tasted great! Will definitely make again!

Easy to make and great tasting. Added onions and garlic to ground beef mixture, used canned black beans, and topped with sou cream. Kids loved it and husband and I added jarred jalapeno slices for extra kick.

Really good and Really EASY! I made a pan for us and froze another to keep on hand. The frozen pan was just as good as the 'fresh' one. We don't care for salsa so I used enchilada sauce and cheese soup (didn't have chix soup). Anyway, it is great and lends itself to substitutions. Thank you for sharing this recipie!

These very very good and easy to make. My family doesn't like beans that much so I ended up adding a little bit more of the beef mixture into each tortilla. I ended up only using about 14 tortillas. Next time I will probably make more sauce or use some red enchilada sauce also since we like them a bit more saucy

We made this with only one change. Instead of using the salsa mixed with cream of chicken, we used 2 cans of red enchilada sauce. It was really simple to put together and was something everyone could enjoy. Next time I will use more rice and try it with chicken.

Really enjoyed these. Forget freezing one pan, I made both and we are all taking it for lunch tomorrow. My 18 month old scarfed these down as well (made them with mild salsa). Added some black beans as well and the flavor was great. Will definately make again!

This recipe was a great stepping stone. I found it doing an ingredient search and substituted shredded chicken for the beef. I then added a few things, like green peppers, tomatoes and black beans to the meat. Everyone loved it.

This was really great and easy. I chopped up onion and garlic and cooked that with the meat. I was running low on taco seasoning so I added a can of El Pato Tomato sauce. This gave it the perfect kick. My husband loved it. I also used black beans. I have been telling everyone about this recipe.

Wonderful. So easy to make . My husband and I really liked them. I used brown rice and doubled the sauce and put a thin layer in the bottom of pan before putting in the filled tortillas, poured the rest on top and used the extra sauce in the bottom of the pan for dipping each bite into. Don't over stuff your tortillas as they will end up kinda dry. I did on a couple and it tasted better with the correct amount in them. I also added extra cheese on top. Will make again. I like that the leftover can be frozen.
