I followed this recipe exactly, except I only used 1-8oz pkg of cheddar cheese, and it was still too cheesy. In fact, all I could taste was cheese. I thought they were too heavy to be called quiche. But, I did find them very easy to prepare. They might have potential with many changes, but I think I'll just find a better mini-quiche recipe instead.

Very Easy! I omitted the mustard, because I didn't have any. I only used 8oz of cheddar. DeLISH!! will be making these again.

This is good but if you increase the artichoke hearts to two jars instead of one; then decrease the cheese by half, it's perfect! I also poured the ingredients into a 9x9" pan and then cut it into 1" squares when cooled.

This was very tasty. I made it for my moms group and it was gobbled up. I doubled it so I made it in a 7x10 glass casserole dish. 30 minutes at 325. I didn't do the hot pepper sauce but instead I did hot pepper flakes. just a shake or two. ALSO, an overnight tip. I mixed the egg mixture leaving out the breadcrumbs. I also sauteed the onion and garlic and mixed it into the chopped artichokes. In the a.m. I mixed it all together and added 1/2 cup of sharp cheddar to the mix and 1/2 cup on top before baking. Turned out great and the prep work was mostly done the night before!

4.5 actually! I added 8 oz frozen spinach (thawed and squeezed dry). Reduced the onion because of personal taste and omitted the hot sauce. Next time I will try using mozzarella and provolone cheese for a milder cheese taste. Overall these are excellent! And very simple to prepare, just a little chopping involved! These were a huge hit, was even asked for the recipe!

I made this for Easter brunch and everyone wanted the recipe. I gave it 5 stars with some adjustments. I used regular sized muffin pans. Per 12 quiches, I used 6 eggs, about 1/2 c bread crumbs, 1/4 c half and half, no mustard, parsley, or red pepper sauce. Using this recipe, almost 30min of cook time was neede. And make sure to use non-stick spray on the tin!

The first time I made this, I followed all of the directions and thought it was pretty good. However, this time I decided to cut back on some of the fat and cholesterol. Instead of 4 eggs, I used 1 1/4 cup egg replacer. I only used one 8oz bag of cheese, which was plenty. Instead of cheddar, I used reduced fat monterey and colby cheese. I also added 1/2 a package of frozen spinach. I defrosted and drained the spinach. I added 1/2 cup chopped mushrooms. It turned out great!! Even better than the original recipe and better for you.

EDIT: I was going through my old reviews and realized that I did not review your recipe fairly. I tried it again EXACTLY as written and was pleased with the results. I still think that the next time I make this I may add some jalepenos or green chiles. casserole. Thanks for sharing.

These were very good and easy to make. I think cooking in the marinade made them a little too salty, so I would use just EVOO next time. Otherwise everyone really enjoyed these. Thanks for the recipe!

Super good! I made them for a christmas party and they were the first thing gone! I didnt have marinated artichokes so I just used a little oil and some juice from the can. Also these would be really good with little filo dough cups! I was very impressed with how easy they were to make and how good they were.

Since we are on the South Beach Diet at our house, I was looking for a recipe for crustless quiche. Well this one caught my eye. Instead of making the "cups" I sprayed a 9" pie pan and cooked it in that for 30 minutes. It was excellent. I've made it twice in four days.
