We always have lots of leftovers when I try a new recipe, so I cut this recipe down when I tried it! No leftovers, and everyone loved it! Next time I will have to make more :) I did use red enchilada sauce to please my little brother, who would have made a face at green sauce though!

Great for quick, easy cooking, and definitely flavorful. I used a red sauce (personal preference) and it worked out nicely.

First time we tried this we werent sure we liked it, but it was so easy I HAD to try it again. I added some sauted onions (I know I know the concept is ease) but the overall recipe is so easy that adding this step is simple and is worth the extra effort. We like it and it re-heats great.

I'm suprising my boss with a Mexican Fiesta for her birthday. This will be easy to re-heat at work. She doesn't like olives, so I added some rice and some diced Ortega chili peppers. I modified the recipe to a 9x9 pan. I also thought red sauce would be more nuetral for the workplace. Since I used a 9x9 I got a little bubble where the corn tortillas overlapped. I just threw some cheese and chili peppers on top to even it out and make it the perfect little mexican enchilada lasagna. I'm sure it'll be a hit!

As much as I hate to say it, my family liked this dish more than the enchiladas I slave hours over. They ate the whole pan in one sitting, and were disappointed I didn't make more. I have one picky eater who hates sour cream, so I omitted it on half of the casserole. A fabulous and QUICK meal!!!

The recipie was awesomely fast and easy and definitly a cook with your kids meal. I just thought the cheese/sour cream was a bit too rich for my taste. It was also much yummier the day after.

Easy, fast, and yummy!!! What more can you ask for? I made it first just like the recipe then decided to add shredded chicken for when I made it for others. It was GREAT both times!!!...I prefer the orginal recipe, but some eaters MUST have their meat!!! :-)
