'My mother came from Ireland as a teen and brought the comforting recipe with her. I find that it's great way to get my family to eat cooked cabbage...hidden in Grandma's potatoes!' writes Marie Pagel of Lena, Wisconsin.

Boxty is a traditional Irish dish made of potatoes. 'Boxty on the griddle, boxty on the pan; if you can't make boxty, you'll never get a man'.

While Colcannon seems to be associated with St. Patrick's Day, I love the combination of potatoes, cabbage, onion and bacon all through the cooler months of Fall and Winter! I attend an annual St. Patty's Day party and this is the dish I'm always asked to bring... and I'm happy to say that the bowl comes home empty every time!

Here's a great way to use up leftover corned beef from St. Patrick's day or to stretch a little corned beef to feed a crowd. Mashed red potatoes, shredded cabbage, and plenty of butter make it taste oh-so-good.

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending scallions or green onions with creamy mashed potatoes. Great on it's own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.

Everyone will love this one. It 's pure comfort food. Shredded potatoes, onions, eggs and melted butter are combined and put into a large casserole, and then topped off with milk and a sprinkle of cheese. Bakes up bubbly and beautiful.

This is a recipe from County Mayo. It is traditional Halloween fare but good anytime! Kale can be substituted for cabbage.

This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.

This is a delicious, authentic Irish cabbage side dish. If you can't find Irish bacon, regular works fine, just drain well.
