I was looking for a good cheesecake recipe to make for my husband's birthday. I am not a great baker or cook by any means, so I was worried about how this would turn out. First try, I went the whole hour at 350 and the cheesecake was overcooked. Also, I overmixed and it cracked, not to mention I had never heard of a 'water bath' before, therefore I had not used it, so there was a grand canyon crack. Overall, my first try was good, just not great. It took me a couple trys to figure out the right temperature & cook time (mine ended up being about 330 at about 48 min, just kept checking on it to make sure the top didn't overcook), don't over mix and get the waterbath concept. At about the 3 try, I had it figured out and needless to say they have been DELICIOUS! I have also used half vanilla/half almond extract to give a different flavor.
