Pineapple Coconut Pie

Pineapple juice is blended with flour, sugar and an egg, and then the mix is heated until thick and creamy. Shredded coconut, butter and a splash of vanilla is stirred in, and the filling is poured into a baked pie shell and chilled.

Key lime pie just the way you like it. This pie is a mixture of key lime juice, lime zest, sweetened condensed milk and eggs in a graham cracker crust. A layer of meringue is spread over the top.

It took some experimenting, but I've finally come up with the perfect lime pie ... refreshing and easy. The pretzel crust adds an extra special touch and every time I serve it, I get rave reviews! When ready to serve, garnish each slice with a dollop of whipped topping and a lime slice. 

Peach Custard Pie II

The peaches are peeled, sliced, arranged in a prepared pie shell, and covered with a lovely egg custard that 's whipped up from milk, sugar, vanilla, and a bit of flour. The oven does the rest. An hour later, the pie emerges perfectly set and ready for a sprinkling of freshly grated nutmeg.
