This recipe is very close to Trader Joe's Spicy Chai Latte. To my horror, TJs discontinued their decaf Spicy Chai Latte which left my kids and I out in the cold...until I modified this recipe and made it no fat, low sugar with decaf, unflavored instant tea! My picky son proclaimed that this recipe was more flavorful and tasted fresher than TJs - that's huge! I did buy fresh spices to ensure peak flavor. Here are my modifications to the author's wonderful original recipe:
I used 1 cup *fat-free* unflavored non-dairy creamer;
I omitted the french vanilla non-dairy creamer (I don't like the film that too much creamer leaves on the tongue);
I omitted all the sugar & replaced it with only 1/2 cup Splenda blend [it was plenty sweet!] to which I added the vanilla and dried it in a 200-degree oven for 30 minutes;
I reduced cardamom to 1/2 tsp because while I love the dimension it adds, the full teaspoon would have overpowered the other spices;
I did add the author's suggestion of nutmeg and allspice, however I did not include the pepper because the cardamom is already peppery.
I used a cuisinart with the metal blade to blend the ingredients all at once [cover feeder assembly with a towel to prevent tea dust from filling the air].
The modified recipe filled 1 empty 10-oz TJs chai latte tin. We used 1-1/2 TJ scoops of tea mix for 1, 8 oz mug of hot water. Maybe next cup we'll try it with hot skim milk.
