Chai Butter Cookies

"It's a great butter cookie recipe that works! If you like to drink chai, this is the cookie for you! It almost taste like buttery gingersnaps."

INGREDIENTS

  • 1 cup unsalted butter
  • 1 cup Instant Chai Tea Mix
  • 1 1/3 cups white sugar
  • 2 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1/2 cup white sugar for decoration

DIRECTIONS

  1. In a large bowl, cream together the butter, 1 1/3 cups sugar, and chai tea mix until light and fluffy. Beat in the eggs one at a time, mixing well after each. Combine the flour, baking powder, and salt; blend into the creamed mixture until all of the dry has been absorbed. Cover the dough, and refrigerate for 1 hour.
  2. Preheat the oven to 400 degrees F (200 degrees C). Roll the cookie dough into walnut sized balls, and roll the balls in sugar. Place the cookies onto greased cookie sheets about 3 inches apart, and flatten slightly using the tines of a fork.
  3. Bake for 10 to 12 minutes in the preheated oven, just until the edges begin to brown. Remove from cookie sheets to cool on wire racks.

This recipe was INCREDIBLE! My best friend loves chai so i made the homemade chai and these cookies for christmas. She loved them, as did I! They resemble a gingersnap but are not as crisp, and they have a very original flavor to them that is just like chai! The only thing i changed was not squashing the cookies with fork tongs as they looked prettier spreading out themselves, and i baked them 15 minutes. You MUST try these cookies and the chai tea mix in this recipe!

I made this recipe tonight. I used David Rio Giraffe Decaf powdered chai mix. These were great! Next time I might try a stronger chai to make them even spicier.

I love these cookies!! My biggest addiction is Chai Tea, and I am so glad you made this recipe. My husband also loves these. I tried making them with Oregon Chai Tea mix. They were great, although if anyone tries this you will have to buy two boxes.
