Directions

  1. Blend water, cocoa powder, apricots, walnuts, and stevia together in a blender until smooth.
  2. Stir blended cocoa mixture and chia seeds together in a bowl. Let pudding sit until thickened, about 30 minutes. Transfer pudding to a serving bowl, cover with plastic wrap, and refrigerate until serving.

  • Cook's Notes:
  • You can add a bit of salt and vanilla if you like to bring out the taste. Also, I'm sure you can use any dried sweet dried fruit such as figs or raisins to substitute for the apricots.

The walnuts and dried apricots made it a bit too chunky for my liking, but the second batch I made without those pieces was creamy & delicious! Try coconut water instead of just plain water, too.
