No heat is required to cook up this yummy Mexican appetizer. The acid in the lime juice 'cooks' up the fish, and lots of fresh vegetables add great crunch. Serve with tostado shells or chips. 

Shrimp Ceviche with Coconut Milk

This is a simple take on ceviche. Instead of letting the shrimp 'cook' in citric acid, you boil them, then let them marinate in a rich and creamy coconut milk sauce. This is simple and refreshing for a nice summer day.

Crawfish, Crab and Shrimp Ceviche

This is a wonderfully elegant trio of seafood in a refreshing and tangy sauce! This three seafood ceviche is worth trying! worth trying. Serve it in martini or margarita glasses and garnish with cilantro leaves and slices of lime. Serve with chips. I make everything ahead and marinate, but don't put the avocado in until close to serving.

Shrimp are marinated in lime juice, chopped, then tossed with tomatoes, hot peppers, celery and avocado for a zesty appetizer. Serve as a dip with tortilla chips or as a topping on a tostada spread with mayo. The fearless palate might like this with hot sauce.

This delicious tropical ceviche is perfect for fancy gatherings. The halibut 'cooks' in lemon and lime juice with a splash of tequila and a lot of fresh mango. Serve in a martini glass, with extra lime on the rim for squeezing.

Citrus Ceviche

My take on the classic Peruvian ceviche. The acidity of the citrus fruit 'cooks' the fish. A nice refreshing meal on a hot summer day. It's imperative to use only freshly caught fish!
