3 pounds cabbage, coarsely chopped
1/2 cup finely shredded carrot
1/2 cup chopped green pepper
1 cup sugar
1 cup vinegar
1 tablespoon salt
1 teaspoon celery seed

DIRECTIONS
In a large bowl, combine cabbage, carrot and green pepper. In a saucepan, combine sugar, vinegar, salt and celery seed; bring to a boil. Pour over cabbage mixture and toss. Cover and refrigerate for 4 hours or overnight.

Fast and easy! and Good!! I used Red Wine Vinegar as the Vinegar. I also added touch more celery seed to suit our tastes. Red and Green bell peppers looked wonderful with the carrots and the lighter green of the cabbage. I did omit the salt, we didn't need it. It was flavorful enough without it. Wonderful with the meal and to snack on.
