I liked the flavor of the dressing in this dish, but if I were to make it again, I'd probably use different veggies. The zucchini didn't really absorb the flavor, and I'm not a huge fan of cauliflower (but I had some that needed to be used, along with some fresh tarragon, so this recipe fit the bill). I let the veggies sit overnight, and, surprisingly, the flavor was weaker than when I first tossed them with the dressing. I used olive oil and left the cauliflower raw. I tried it with and without the green onions, and the onions added so much more flavor, along with the olives. All in all, not a bad salad.
