The bread crumbs made this salad...I used shredded iceberg lettuce and sprinkled a little paprika on top for added color. Maybe chopped hard-boiled egg would make another complimentary flavor layer???

I really liked how different this salad was with the grated cauliflower. I thought the dressing was a little too sour from the amount of lemon juice - I may adjust that next time. I made homemade croutons and they looked great on this salad.

Wow! This was really yummy! I don't usually care much for raw cauliflower, but grating it makes ALL the difference! I did substitute olive oil for the mayo since I do not eat soy products and bumped up the lemon juice a tad to compensate. This will be a regular in our house, thanks!
