Cat's Famous Coleslaw

"This is a very light yet amazingly tasty coleslaw. Instead of usual mayo this version uses Greek yogurt and the taste doesn't suffer in the least. Very refreshing."

Ingredients

  • 1 onion, finely chopped
  • 1 head cabbage, finely chopped
  • 4 carrots, grated
  • 1 cup Greek yogurt
  • 1 (8 ounce) can sliced pineapple, drained and chopped
  • salt and pepper to taste
  • paprika to taste
  • garlic powder to taste

Directions

  1. In a large bowl, mix the onion, cabbage, carrots, Greek yogurt, and pineapple. Season with salt and pepper, paprika, and garlic powder. Chill 30 minutes in the refrigerator before serving.
