Very good and quite simple. The only part that really required alot of work was shredding the chicken. I made it exactly as the recipe said except letting people add their own sour cream at the table and instead of whole tomatoes I just used more of the diced ones. Then I made my own little tortilla chips from another users review suggestion. It was scrumptious! There is alot of chicken in the recipe. It could probably be halved if someone wanted to but with as much as there was in it, it was very filling. Will definitely make again but would be nice to use pre shredded chicken on lazy days. Not sure it would have that perfect flavor as it does with boiling in the juices of this recipe.

Very good soup, very similar to a local mexican restaurant. I did use less chicken breasts, 5, and it still had quite a bit of chicken. Look forward to my next bowl of it!

Excellent soup! Like others, I played around with the seasonings some and the recipe made enough I was able to freeze for later. When I thawed it, I added rice, and the kids liked it even better!

Really tasty. I used the handblender to break down the chuncks of chicken and that left me with a really nice consistency.

Adjusted this for the crockpot, and it came out nicely. Saute onion and garlic in the olive oil ,reduce the water to 1.5 cups, add a can of beer. Add all ingredients including whole chicken breasts (can be frozen or thawed) and cook on low all day, then take out chicken and shred it. Mix shredded chicken back in soup along with the sour cream, cook for a half hour on high. I also added fresh cilantro and 1.5 tsp cumin, and omitted the cans of tomato soup and whole tomatoes. Quite good topped with shredded cheese and crushed tortilla chips.

I didn't find this soup spicy at all, and I made it exactly as the recipe stated...except I used less chicken. I might have used 5 half breasts, 8 was too much. Eight servings? Maybe if you're friends happen to be cattle. I ended up with quite a bit. I'm not sure I'll make it again but if I did I will cut back on the sour cream, the taste was too much for me. I might cut back on the chili powder and add something for more heat.
