I have been making a version of this salad for years - think I got it from a magazine? But my recipe calls for 1 pear, diced and 1 apple, diced, plus a handful (1/2 cup?) of dried cranberries. It makes a nice holiday salad with the fruit. If you tossed in some cooked (rotisserie? grilled?) chicken it could be an entree salad.
I make the dressing in the blender (don't blend the poppy seeds, just stir in by hand at the end) - goes together quickly and makes a nice smooth dressing.
Delicious! I halved the dressing (I used dijon for the mustard since it didn't specify) and it was plenty for the salad. The only thing I think I'd do next time would be to reduce the sugar a bit, as we though tit was a little too sweet. Other than that, this was a great, simple combo of ingredients that I will be making again~YUM! Thanks for sharing. :)
