I found this recipe in a local farm publication. I guess that's fitting, because whenever I make it, I use fresh vegetables grown on our farm. This hearty recipe comes in handy whether you're feeding some hardworking farmers, or a large group at a potluck supper. I've found that a shredder works well for preparing the vegetables and cuts down on baking time.

Layers of potatoes and onion baked with a simple cheese sauce make a hearty and comforting casserole. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety. 

Macaroni Au Gratin

Homemade macaroni cheese is always a hit! In this recipe sliced cheddar cheese is layered over elbow macaroni. A milk and flour mixture is poured over the macaroni and cheese, and then it's baked. It's as easy as that!
