Carrot Spice and Walnut Pie

Pureed baby carrots are spiced and mixed with honey, nuts, butter, eggs and lots of sugar. This lovely, sweet concoction is then spooned into a pastry shell and baked for about an hour. Serve this wonderful pie warm with whipped cream.

Carrot Pie, with it's sweet cinnamon taste, has been in my family for at least 5 generations. It's a must have at our family Thanksgiving and Christmas get togethers, (but good anytime!!) Can be served with dinner, or as dessert with whipped topping or Ice cream.

Sweet Potato Pecan Pie

For this luscious pie's filling, sweet potatoes are mashed and combined with egg, sugar, salt, cinnamon, ginger, cloves and cream. Pecans are combined with brown sugar and butter to make a rich caramelized topping that's spooned onto the cooked pie before it's slipped under the broiler for a moment or two.
