Directions

  1. In a bowl, combine the carrots, apple, lemon juice, honey, almonds, salt and pepper. Toss and chill before serving.

Loved the crunchiness and the toasted almonds. I also added dried cranberries and thought they were delicious. Really healthy eating really quickly!

This was OK. I added raisins which was good. Probably my biggest mistake was with the salt and pepper... I would just leave it out entirely. I may try it again but this time I'll probably add some ginger.

I needed an Apple Carrot Salad recipe for 400 kids. Not only was this recipe a snap to make, it multiplied well and was extremely healthy. I did omit the almonds (in case of nut allergies) and replaced them with raisins. I thought the salad was delicious, the kids though it was pretty good, for something healthy.

This is a delicious, sweet way to serve carrots. We loved this healthy recipe. I added a few raisins.

We thought the honey made this salad a little too sweet for our taste so we used the leftovers in place of shredded carrots in a carrot cake recipe and had the yummiest carrot cake ever.

This Carrot Salad is Wonderful. It is very Flavorful. I did add about a 1/2 cup raisins to this recipe. My Husband also thought it was great. Thanks for entering a such a good recipe. E-Rainey
