We 'd like these for breakfast, lunch and dinner. So will you. Oodles of grated carrots are folded into a fabulous batter of flour, milk, shallots and thyme. This sets in the refrigerator for three hours, and then dollops are scooped into hot oil and frie

Just like potato pancakes only shredded carrots star in this one. Eggs, flour, breadcrumbs and garlic surround and bind the carrot together. They cook up crusty and golden and are so good with homemade applesauce.

Cauliflower and Carrot Casserole

This is a great side-dish. Carrots and cauliflower are baked in a zesty hollandaise sauce. It may seem complicated but its very easy, as long as you have a blender. Very creamy and zippy!! Not to mention DELICIOUS!
