Carrot Gelatin Salad

"Old-fashioned carrot salad made with lemon gelatin and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!"

INGREDIENTS

  • 1 (6 ounce) package lemon flavored gelatin mix
  • 1 (20 ounce) can crushed pineapple, drained with juice reserved
  • 4 large carrots, shredded

DIRECTIONS

  1. In a large bowl, prepare the lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour.
  2. When the gelatin has thickened, stir in pineapple and shredded carrot. Cover and refrigerate until set, at least 4 hours.

great salad!!! however I do like better when made with lime jello.

This is very similar to a recipe my mother always made called "Perfection Salad." She learned it in home ec class in the early '40's. She always used lime jello, and besides the carrots and pineapple, she would sometimes add in some finely chopped celery, or some shredded cabbage. One of my favorites from my childhood! Thanks for sharing it, Asteng.

VERY good! Mom used to make this and was one of the first things I learned to make. Lost the recipe but found this one. We called it carrot-pineapple salad, but the recipie is the same! thanks for sharing it!!!
