1 cup shortening
3/4 cup sugar
2 eggs
1 cup shredded carrots
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

DIRECTIONS
In a mixing bowl, cream shortening and sugar. Add eggs; mix well. Stir in carrots. Combine the flour, baking powder and salt; gradually add to carrot mixture. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 400 degrees F for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

I liked these cookies, with some minor adjustments. They came out nice a soft, but I did change the recipe as I thought they would be too bland as is. This is what I did: I used margarine instead of shortening, I doubled the sugar, as with only 3/4 c they are not sweet enough to be called a cookie for me, I added 2 tsp. cinnamon and a cup of quick cooking oats. With these ajustments I'd give them 5 stars since it is a good way to sneak a veggie to my toddler.

Good stuff. I found that the baking time was nice and exact. I also added walnuts, which seem to have made the cookies slightly more addictive. I find myself eating them. If BUSYGAL's advice on sugar content is taken, be sure to add a little extra flour if you don't put in oats. Really nice cookies. ALMOST cake-like, but not quite.
