This recipe was wonderful! I used Splenda instead of sugar and I couldn't tell a difference. I changed the number of servings to 8 and it didn't effect anything. This is now my favorite frosting!!

Deserves 10 stars!This is an awesome recipe. My mom even requested I make it for her birthday. My husband loved it and he generally dosent like carrot cake! I blend the pineapple a bit so there are no chunks. Thanks for the recipe!

Absolutely Awesome! Only change I made was I used regular milk instead of buttermilk because that is what I had on hand. Would not change a thing. Perfect as is!

The cake turned out fabulous. I made a few changes, though. My cake came out very moist and delicious, by accident too! I didn't read it correctly, and I didn't drain the pineapple, and I added a little too much milk, maybe less than a 1/4 cup. Also, it's a very big cake, so it will last for a good week+; I would suggest it for a party; your guests will be delighted. =)

This was the BEST carrot cake I have ever had. I have made it twice already and it is so moist. I also like to sprinkle the top of the icing with the leftover coconut. It makes a great touch! Thank you for the recipe!

The first time I tried this cake, the frosting slid off the cake when I cut into it. Also, the consistency wasn't right. But I had a feeling that I should give it another try before rating it and deciding to move on. I'm so glad I did. It came out perfectly the second time. This is truly some awesome cake!

Great recipe! Everyone loved it! I read many recipes where someone had to change this or that. I didn't change anything about this one except to bake it in a couple of spring-form pans and put a thin layer of the cream cheese frosting between the 2 cake layers.

This carrot cake is wonderful!!! I am constantly getting requests for this cake. Everyone says that it reminds them of their grandmother's cake. I omit the coconut and add about a cup of raisins. I always make it as a layer cake and therefore prepare 1.5x the frosting.

I was going to make this for my anniversary because it sounded very nice. The batter seemed perfect but when it came to baking it, it never set. It was carrot pudding and i had to throw it away. I wouldnt recommened this recipe to anyone.
