This simple little recipe really surprised me! Gosh, it was so good! I followed the directions only straying a little when I actually poured a little of the chicken broth in the pan while sauteing the veggies. I'm not sure if it really made any difference, I did it because I had to open the can of broth anyway so I fgured I would use a little more of it. I also tossed in a little minced garlic because we love it so much. We ate this along with some white rice and it was so darn good! This recipe will be a staple around here. Thanks so much for sharing it with us!

Great recipe. It has a mild flavor that easily accompanies many meals. The taste is unique and pleasant. A nice change.

I made the following changes - everyone voted it 5 stars! Follow recipe directions to cook veggies. I used about three or four handfuls of frozen broccoli florets in addition to the other veggies. After cooking, liberally sprinkle Mrs. Dash, basil, garlic powder and rosemary over veggies. Cube two chicken breasts, saute in olive oil for three minutes. Boil 8-10 oz. pasta (I used brown rice pasta) for 5 minutes in salted water. Mix everything. Make a roux by heating 2 T. butter + 2 T. flour on med. high, stirring constantly. Remove when golden to deep brown (be careful not to burn it). Add chicken broth to desired consistency (I added about 2/3 can of ch. broth). Add to ingredients. Place half veggie mix into 13x9. Grate about 1 2/3 c. extra sharp cheddar over this. Add the rest of the mixture. Grate enough to cover top. Yum!
