DELICIOUS! This was an excellent side dish and I can't wait to make it again. I threw in some sliced mushrooms to the carrot mix as I was sauteing the onions and used celery seed instead of celery (since I didn't have any on hand.) The leftovers were absolutely gobbled up! Thanks for a great recipe!

Delicious! I forgot to use the stock but honestly didnt need any. The vegetables were cooked PERFECTLY! We really enjoyed this dish. I used Cabot 3 year aged cheddar which was fabulous. It doesn't shred well, so I just chopped it up. I did add some garlic salt and lemon pepper. I love the tender crispness of the veggies. Thanks for this one!

My husband and I loved it. I think I'll use a bit less butter next time. We found it a bit greasy. Incredible. Our son wouldn't touch it. He only likes veggies plain. No idea how I got so lucky. It's the adults who need then dressed up! I am planning on tripling it for Thanksgiving.

This was only OK for me. Everyone ate it and liked it more than I did though, so I give it 4 stars for that. It was a bit boring for my taste. But I liked that it was quick, easy, and healthy.

I was amazed at great this recipe tasted. Will make this often for sure. I did not have any fresh carrots so I used canned ones and it still came out great although I think fresh would have been a little bit better.

This is a wonderful side dish! Made it to recipe, other than using olive oil instead of butter. Going to serve it to the boys with lunch and see how they like it! I think it's a winner!

My family loved this recipe. Since veggies are virtually calorie free, so the cheese doesn't take away from the low-fat qualities. It does take a little work so I do not recomend it for a quick evening meal. It is more of a Sunday side dish.

I love this recipe...I make it all the time. The only thing I do different is cut back on the butter/margerine beacause the first time I made it was a little greasy!

This was very easy. I actually asked my babysitter to make it for the kids and told her to add cooked chicken and cooked pasta. She does not know how to cook at all and it came out really well!

This was a nice side dish. I took the advice of others and used a few sprinkles of Mrs. Dash. I didn't add cheese to half of it (my visiting dad doesn't like cheese) and didn't use as much as was called for but it was still good. I'll experiment with adding other veggies to the mix in the future (and will probably use cooking spray instead of butter next time). Thanks for the great idea! :-D

I changed this recipe to suit what I had on hand and to make it healthier. I omitted the butter and used Pam flavored butter spray to saute all of the veggies. I can't imagine not using any seasoning, so I added lots of garlic powder, paprika, and basil. I added 2 boneless skinless smoked chicken breasts, chopped. I only had a hand full of shredded low fat chedder (probably less), fat free feta, and a tiny pit of fresh mozz torn up and spread throughout the dish. I only put the cheese in the middle layer, and not nearly as much cheese as the recipe called for. I used very reduced sodium chicken broth. This was ok...kind of reminded me of chicken and veggie soup, but w/out all of the broth. The reason I gave this 3 stars is because if I hadn't have added the seasonings, this would have been very bland.

This simple little recipe really surprised me! Gosh, it was so good! I followed the directions only straying a little when I actually poured a little of the chicken broth in the pan while sauteing the veggies. I'm not sure if it really made any difference, I did it because I had to open the can of broth anyway so I fgured I would use a little more of it. I also tossed in a little minced garlic because we love it so much. We ate this along with some white rice and it was so darn good! This recipe will be a staple around here. Thanks so much for sharing it with us!
