Thanks to the reviewer who made the suggestion to cook the carrot mixture in a glass mixing bowl in the microwave, then mix everything else in that bowl. So much easier and less to clean up!! I used 2/3 cup Splenda,doubled the spices, omitted the raisins, added 2 tsps vanilla, 8 oz. can well-drained pineapple, and 1 cup chopped pecans. I also used a Cream Cheese Frosting. The bars were a huge hit at a church gathering last night. The next time, i will add 1/2 cup more shredded carrots and add 1/2 cup of whole wheat flour. This recipe will be my new favorite cessert to take to pot lucks and family gatherings.

I thought that this was very good. I will probably reduce the amount of cloves though. This will be good to freeze in individual portions and put in the kids' lunchboxes!

This is a great recipe! It's easy to make. The spicy flavor is great. The sugar can definitely be reduced, it's quite sweet as is. Very good.

This is a great recipe and I will use it again. I used wholemeal flour and added some wheatgerm and linseed meal to give a little more fibre.

Very good and very easy. I added in an 8oz can of drained crushed pineapple and topped the bars with the allspice cream cheese frosting. A definite keeper.

These are wonderful and will be great when asked to bring dessert! Next time I'll combine ingredients to be simmered in glass mixing bowl and microwave. Then add the remaining ingredients in same bowl.

I also found no mention of the 3 Tbs butter so I put it in the pot to boil as well. I used golden raisins which add a nice juicy addition. I also made a quick cream cheese frosting to top them with, YUM! Turned out kinda like carrot cake brownies!

I just made these bars, and was surprised to find no mention of where to put the 3 tbsps of butter. I put the butter in the pot to simmer with the rest. I added extra spice: 1 tsp ginger. I also skipped the walnuts, since without nuts these bars could be considered lowfat. I cooked these bars for 25 minutes and that was enough. The texture of these bars isn't ideal, but the taste is nice. I'd probably put a bit less sugar (3/4 c) in next time and sprinkle some powdered sugar on top. A decent lowfat snack cake
