Caribbean Grilled Chicken Breast with Pineapple Salsa

1 package McCormick® Grill Mates® Spicy Caribbean Marinade
1/4 cup water
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 pounds boneless, skinless chicken breasts
2 red onions, cut into 3/4-inch thick slices (do not separate into rings)
2 tablespoons olive oil
kosher salt and McCormick® Ground Black Pepper
Salsa:
1 cup chopped fresh pineapple
1/2 red bell pepper, chopped (about 1/2 cup)
1/4 cup chopped red onion
1/4 cup pineapple juice
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1/2 teaspoon McCormick® Crushed Red Pepper
1/8 teaspoon kosher salt
1/8 teaspoon McCormick® Ground Black Pepper

DIRECTIONS
Combine marinade mix with water, oil and vinegar in glass dish or large self-closing plastic bag. Add chicken, turning to coat all sides. Marinate in refrigerator 30 minutes, or longer for extra flavor.
Preheat grill or grill pan to medium. Cook chicken 4-5 minutes per side or until done, basting with remaining marinade halfway through cooking, if desired. Discard any leftover marinade.
Rub or brush red onion slices with olive oil; season with salt and pepper. Grill over medium heat 3-4 minutes per side.
In a medium bowl, combine salsa ingredients. Serve chicken atop grilled red onion slices; top with salsa.

Great recipe! We like things spicy so I added a little extra crushed red pepper. Served it to guests along with grilled veggies and rice. (We bought an extra pkg of marinade for our veggies so the flavors would tie in nicely.) The meal looked like we spent a lot of time on it, but didn't. Will definately make again and again.

Well, my supermarket had every McCormicks seasoning but this one so here's what I did to compensate. I used a chicken herb marinade (my store brand) and added a tablespoon of Jamaican Jerk seasoning. It worked beautifully. I also used canned pineapple chunks and used the unsweetened juice from it for the 1/4 cup pineapple juice called for which I sweetened with one packet of Splenda. This is a fantastic recipe, a definate keeper. The only thing I'd do differently next time would be to double the amount of pineapple, you'll want a bite with every bite of chicken. As it was the can was twenty ounces and the recipe called for eight so I made pineapple rice with chicken stock instead of water, lemon pepper seasoning and added the rest of the pineapple and served as a side dish. Served this also with steamed asparagus and this meal was a major knock-out. Don't forget to grill the onion slices, perfect accompaniment. Oh yea, I doubled the amount of red pepper and to gave it some extra zing, definately not overpowering. I loved this recipe big time!!

Mixed review from two opposite tastes: husband thought it was too spicy. I thought it was perfect. If you like spicy and sweet, you will like this. The cool pineapple salsa offsets the heat of the marinade. If you like it less spicy, you can omit the red pepper flakes, as they do add more kick. It really has a nice tropical flavor.

Though this is a McCormick(r) submitted recipe, we tried it with a different Caribbean spice, more garlic, and a lemon "Pam" spray before grilling. We also added Mango to the salsa recipe........ GREAT

This was really tasty. I was unable to find this Grill mates mix in my local markets, so I had to improvise with marinade ingredients. I let this sit in the marinade overnite and then grilled on my George Foreman grill. This tasted very good with the salsa. I'll keep looking for the grill mix, but I'll make it again my way if I can't find it.

Very good grilled chicken! It is spicy but as others have mentioned, the pineapple salsa really cools this off and the blend of the two different flavors is wonderful! It looked and tasted tropical and exotic. I marinated for 4 hours and used diced pineapple...but really, didn't change a thing and wouldn't in the future. This would be great dining for two on your patio in the summer...hmmm, I can't wait! Thanks McCormick!
