Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a microwave-safe bowl, microwave chocolate chips until melted. Stir occasionally until chocolate is smooth.
  2. Cream butter or margarine with sugar. Beat in eggs, one at a time. Add melted chocolate, instant coffee, and rum extract. Stir in flour and broken walnuts. Turn filling into pie shell. Top with walnut halves in decorative pattern.
  3. Bake at 375 degrees F (190 degrees C) for 25 minutes. Cool.

I made this pie for my book club, and followed the recipe exactly. As soon as they tasted it I started hearing things like, "Mmmmm," and "OMG". Everyone who tasted it loved it, including me. It was the perfect ending to my Caribbean-themed dinner.

My mother taught me how to make this pie years ago. It has always been a big hit with the adult crowd at parties. I love it, but be prepared for intense flavors. If you enjoy dark chocolate and coffee, you will love this pie!
