Although I grew up in the Pacific Northwest, southern barbecue was a big part of my youth. Coming up with unique BBQ sauces was family fun. Directions

  1. Heat the olive oil in a saucepan over medium-high heat. Stir in the onion, garlic, and ginger, and cook until tender. Reduce heat to low. Mix in ketchup, brown sugar, molasses, rum, hoisin sauce, tomato paste, vinegar, chili powder, and cayenne pepper. Cook and stir 5 minutes, until well blended and heated through. Stir in remaining rum.

Excellent! I found it a little tangy, but that could have been cured by a little extra boiling! I poured it over chicken and served with rice & beans.

A little more cayenne and ginger and this instantly became my new Island BBQ sauce.....
