"I was looking for a lower-calorie way to make my husband's favorite summer side dish, as my traditional potato salad was laden with eggs and mayo! The tzatziki dip as dressing certainly did the trick! The tarragon in the onions gives that hint of 'what is that?' to this recipe! Can be served warm or chilled."

small potatoes, or more as needed
red onion, sliced into 1/8-inch pieces
3 fluid ounces
bacon, cut into 1/2-inch pieces
tzatziki sauce, or more to taste
chopped fresh chives
salt and ground black pepper to taste
I used red potatoes in place of white and then used a white onion in place of the red onion due to what I had on hand. I made a tzatziki recipe from this site and left the peel on because I am a rebel like that. This was a really nice change from traditional potato salad. The only one thing I think it was missing was some salt. Other than that, perfect as written.
