Caramelized-Onion Pork

SUBMITTED BY: Nell Cruse

"'We live in a farming community, and one of our main crops is onion,' writes Nell Cruse of Ontario, Oregon. 'When I competed in a cooking contest at the Idaho-Eastern Oregon Onion Festival, I was flabbergasted when I won the top three prizes. This was the first-place recipe.'"

mmmmm, we were very pleased with how this recipe turned out. covering the tenderloin with the carmelized onions kept the meat tender & moist. i served this yummy dish with pork gravy, baked yams & fried apples. many thanks nell!

For a simple, easy recipe this is great!! The only thing I did differently was that I used pork chops instead of a tenderloin. Next time I might double the onions just because I love onions.
