Super rich and scrumptious. Almost brownie-like. I swapped the walnuts with pecans and tried both Rolos and caramel filled Hershey kisses. But preferred the kisses because of the gooier texture. Rolo's came out slightly harder and chewier. Kept everything else the same and loved it. Very easy to make, just a little time consuming to unwrap all the chocolates but well worth it.

These are some WICKED COOKIES.I have also made this recipe without the cocoa or nuts and used miniture snickers for the center.Surprisingly the mini snickers held their shape inspite of baking.And the rich candy filled center was awesome.

This cookie is brilliant! Using dutch process cocoa is extremely important. It made all the difference in the flavor and intensity of the chocolate. It balanced the extra sweet caramel filling. Chilling the dough made it much easier to handle and roll into balls. My cookies looked perfect and they traveled from SoFla to LA with no problem at Christmas.

The cookies tasted great. We omitted nuts from the dough and then ground 1/2 cup walnuts into a powder and mixed it with the 1/2 cup of sugar. Using Rolos was more effective than Brach's caramels (made for a softer caramel the next day). Very tasty - our guests were eating the raw cookie dough before we even put it in the oven! Would make again, even though they are so unhealthy!

I suppose I'm the minority. After three full days of making scrumptious treats for Christmas, I had beautiful trays made up for my guests. I was really excited about these because there was a lengthy ( not hard) amount of preparation and to me they tasted not bad, (the middle makes the cookie- the cookie itself wasn't anything all too special)but most of them were left on the trays. I was disappointed.

These are pretty YUMMY, but sometimes the caramel came out of the cookie and it made a big mess. It gave me an excuse to eat the "mess ups" though! Everyone likes them, but make sure to factor in the 2 hour chill time in the prep time. It's a yummy cookie, but I gave it 4 stars for the extra prep work... unwrapping all the rolos, chill time, having to wrap the dough around the rolo, having to let them sit on the cookie for several minutes before taking them off because they are so soft and gooey...a little work and hassle, but if you love oooy goooy chocolatey cookies, this is for you.

Excellent cookies! The rolo even melts down so it is almost flat -- I was afraid I'd have a visible lump in the middle of the cookies.

Very good. Dough does need to be refrigerated while you aren't using it - gets very soft. I didn't use nuts and they were still great.

The only thing I changed on these cookies was that I didn't add the unsweetened cocoa powder, only because my sister does not care for cocoa powder; they were delicious!!! Be sure to chill or freeze the dough; I didn't and it was hard to work with.

I have been using this recipe for years. Sometimes I add white chocolate chips to the cookie. I have also changed the caramel filling to almond bark with different flavorings. Mint flavoring is my favorite!

For the past few years I have made the same cookies/baked goods for christmas. This year I wanted to try something else. WOW! These are so good I have to make a second batch as my husband ate too many and he's already requesting more. Fairly easy to make and as long as you make sure you refrigerate the dough as directed it isn't too hard to work with. Excellent and will definitely be on my baking list for years to come.

Fabulous cookies - the dough is very sticky to work with...I store it in the freezer for an hour before I work with it and take a small bit out at a time. Rolos work perfectly.
