These cookies are SO good. I used Peanut Butter Kisses and they turned out great and didn't leak. YUM YUM YUM. I'm going to make some more right now! Oh, I guess I did back the temp down to 350 but my oven seems to be hot. So i did 8 mins in a 350 oven.

I found this recipe in a book a few years ago and everyone loves them. i found that if you cool the cookies upside down for a few minutes then turn them over that the caramel does not run out..hope that helps because they are delicious cookies!

This is an excellent recipe! I have made one similar and this is much better (the other one used prepared cookie dough). As for the caramel center, I highly recommend the Junior Caramels (put out by the same company that does Junior Mints). They are small, round and soft caramels and I have yet to have any leak. (an added plus is the low cost).

THis cookie is now one of our favorites. One tip.. don't panic when you pull the batter out of the refrig and it is hard as a rock.. Let it sit for a bit and you'll be on your way. I am now making my second batch as the first did not make it till Christmas.

This recipe is awesome and I plan to make this a new christmas tradition. I used carmel kisses. I did not get 48 cookies as I made them a little larger to ensure they covered the kisses and I did not have carmel leaking.

These are my signature cookie! I bring them to swaps and always send them to friends and family. I make the recipe as written, except I omit the nuts. I use rolo candies. I've never had a problem with leaky caramels, but I would think that freezing the candies would help. I use the medium size cookie scoop from Pampered Chef and they always turn out perfectly.

These cookies were wonderful! I happened to have the special dark cocoa so used that. I used Rolos and followed another reviewers advice to freeze them before covering them with the cookie dough. Worked perfectly. I didn't divide the dough, just eye-balled the amount to wrap round the candies. Great recipe, Thanks!

These are great cookies, but a pain to make. If you are looking for a pretty cookie that gives the WOW effect, then make these. They are very good. However they do take a long time. This is what I changed. I used a Dark Chocolate coco power. Then instead of dividing up the dough a bunch of times I just kept the big bowl in the fridg and took a little out at a time and made my cookies. If the dough starts to warm up then it is impossible to work with, must keep it chilled.

Sorry - if you had major trouble with these, I think you did something wrong. I followed the recipe exactly (but baked at 365 instead of 375 because high temps with cookies are a no-no, at least in my high-altitude hometown). The dough was pretty soft but held up fine after refrigerating . . . it flattens a little around the Rolos after baking, but mine were still quite cute, and all cookies sink at least a little bit. Yum yum yum! Everyone loved these and I'll definitely be making them again, for holidays and every-days.

I really liked these! I didn't have any of the problems mentioned in other reviews. I followed the recipe and used Dove caramel filled choclates. I experienced to running of caramel with these. They tasted much better than the Rollo ones I tried just to compare. Neither ran, and I didn't even put them in the fridge. Made them right from the mixer. Not sure if I'll like them as much cold, but they are divine right out of the oven!

I should have read the comments before I made this recipe. The original recipe is miserable to do and did not raise. I adjusted the recipe based on previous review by adding the extra 1/4 c. flour, 1/3 c. cocoa, & 1/2 t. salt plus I substituted the butter with shortening and removed the nuts and they came out beautiful. My mother always used shortening with her chocolate chip cookies and swears that's why they raise.

First, if you're baking these for Christmas, buy the candies the day after Halloween. Not only are they half priced, but the Rolos are packed in 3's, so it is less unwrapping to do. They are easy and good, but not exceptional. I have extremely HIGH standards for cookies, so even a four from me is good for a cookie. I did get several requests for this recipe. I followed other reviewers advice and added the extra cocoa and flour.

Very disappointing recipe. Tastes good but the eye appeal is lacking. Too many caramels leaked out while cooking. Needs to stay on sheet longer than 4 minutes or else they fall through the wire racks. I needed something delicious for a cookie exchange with the recipe, but I guess I won't take these after all. Way too much work for a poor outcome, but the family will eat them anyway!

Great cookie. I used them at my cookie exchange party and everyone loved them. I used Rolo candies as the caramel and they worked out wonderfully. I did not use nuts in my cookies because of food allergies of my children. They were absolutley wonderful!!

I made these at a candle party that I hosted- everyone loved them and I ended up having to make copies of the recipe for several of the ladies. Thanks for this great recipe. PS. I just used regular caramels (not chocolate covered) and they were still wonderful! Shelly

Very good and pretty easy to make. If you cannot find chocolate covered caramels, you can substitute Kraft Caramels. I tried them whole, halved and in thirds and halves worked best.

the dough got a little crispy on the edges so I added a 3.4 ounce of chocolate pudding mix to the recipe turned out great!

I really expected these cookies to be something special, but they weren't. The actual cookie part isn't as good as some of the store bought dough. The dough isn't "easy" to work with unless it's very very cold. I really love desserts, and I especially love anything chocolate. I'm easy to please, and I cook desserts quite frequently. I will not be making this again.
