A perfect campfire treat, fresh bananas are carefully slit open and stuffed with marshmallows and chocolate chips, wrapped in aluminum foil and cooked for a few minutes until the chocolate is melted. Then just dig in with your spoon!

For a quick snack, I buy the small tortilla shells in the refrigerated section in the store. I then spread peanut butter and or bananas/raisins on, fold and serve. In the morning, I have added a little honey on top.

This recipe is a family favorite. It is great for using over ripe bananas. I usually double the recipe and make two loaves. You can also add walnuts if you wish. Note: When your bananas are over ripe, you can put them in the freezer until you are ready to use them.

I developed this recipe after trying many versions and I like this one the best. It's moist and has a sponge-like consistency and is very simple to make. It can also be used in a 9x13 pan.
