INGREDIENTS
1/4 cup butter, cubed
2 (20 ounce) packages refrigerated shredded hash brown potatoes
1 (8 ounce) package brown and serve sausage links, cut into 1/2 inch pieces
1/4 cup chopped onion
1/4 cup chopped green pepper
12 eggs, lightly beaten
salt and pepper to taste
1 cup shredded Cheddar cheese

DIRECTIONS
In a large skillet, melt butter. Add the potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat for 10-15 minutes or until potatoes are lightly browned, turning once.
Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook for 1-2 minutes or until cheese is melted.

I made this on our camping trip this weekend and it was a big hit! I served it it tortillas with salsa like a breakfast burrito.

We didn't care to much for this.The hash browns were mush and the dish was kindof bland . It looked a lot worse than it tasted but it didn't taste great either.

Browned ground pork sausage first. Added the potatoes, etc., after it was cooked. A little bland but that can easily be fixed with some spices. Wish I had tobasco on the camping trip. Will probably make again because it is easy and feeds a large crowd.

We liked this! Something different while camping. We put the mixture into tortillas for breakfast burritos and served with salsa and sour cream. You can generously fill 10 10" tortillas with this recipe.

We left out the peppers as I'm not a big pepper fan, and since I didn't buy a foil bag beforehand, just cooked it over the stove. Everyone loved it!

Terrific!! The only change I made was to use hash browns that already contained peppers and onion (in order to save time). YUM!!!

I used yellow peppers, and omitted the sausage. I also made my own hash browns, rather than using store bought. Just shred a potato with a cheese grater, and toss it in the pan. I drizzled a little bit of light syrup on top. It would definitely make this out camping.
