INGREDIENTS
1/4 cup butter, cubed
2 (20 ounce) packages refrigerated shredded hash brown potatoes
1 (8 ounce) package brown and serve sausage links, cut into 1/2 inch pieces
1/4 cup chopped onion
1/4 cup chopped green pepper
12 eggs, lightly beaten
salt and pepper to taste
1 cup shredded Cheddar cheese

DIRECTIONS
In a large skillet, melt butter. Add the potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat for 10-15 minutes or until potatoes are lightly browned, turning once.
Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook for 1-2 minutes or until cheese is melted.

We didn't care to much for this.The hash browns were mush and the dish was kindof bland . It looked a lot worse than it tasted but it didn't taste great either.

I made this on our camping trip this weekend and it was a big hit! I served it it tortillas with salsa like a breakfast burrito.

Found this to be a hearty breakfast before heading outside to do some work. I had a 30 oz bag of potatoes so I used those. Was plenty. Didn't have green pepper so I used red instead. Sure to have at least 2 more breakfasts out of this at least! Thanks for the post. Will make again!

I only had sausage patties so I used those instead and of course I added some jalapenos and a dash of hot sauce. This was a delicious weekend breakfast for us. We really enjoyed it!

I used ground breakfast sausage for this instead of the links the recipe called for. This was very good...even still good left over the next few days. I did only use one package of the shredded potatoes instead of two, and felt it was plenty.

I made this when we went camping. We couldn't figure out how to use the camp stove so the hashbrowns weren't completely done. There was only 4 of us so I halved the recipe. I was still a great hit. Definatly a keeper!

Since there's just 2 of us, I halved the meat, potatoes and eggs. Left all other portions the same. This was nice and easy and a one pot meal which is always appreciated when camping. I thought I made it even easier by using 8oz. of ground pork. I browned that up so didn't use the butter at that point. I followed everything else the same then. The meat was so lean that I did need a tablespoon butter then for cooking the eggs. Thanks for the quick and easy camp breakfast!
