I wish there were half stars, I would give this three and a half. It's good, but not anything to really rave about. It definitely needs the fruit salsa to make the dish. Having said that, both my boys (aged 3 and 1) ate it right up! The peppers in the cheese mixture don't add too much heat - or really even flavour. If you wanted more of that, I would recommend increasing the peppers.

I went out on a limb and made this for my boyfriend and father who aren't the most adventurous eaters. I waited for them to admit that they really liked it to tell them it contained goat cheese. It tastes so good and is so simple to make (easy to pre-prepare a lot beforehand as well), and I love that it's pretty healthy- this is definitely going to become a household favorite. Some notes on the recipe, when it says 'combine first 4 ingrediants' it means the papaya, cilantro, onion, and lime. I also used twice as much of both cheeses because I didn't really think 2 tbs per tortilla was enough.
