We thought these were fantastic!! The mayo I make all the time now. I made the Focaccia bread myself and substituted the feta for plain goat cheese (hubby dislikes feta) and they were great! Highly recommend!

Wow, great sandwich. Followed exactly, except I only had hoagie rolls. Also had a portabello mushroom, so sliced that up and added it. One of the best sandwiches I've had, ever (meat or no!).

This recipe is delicious. I don't have a grill so I didn't BBQ it but I did saute it until it darkened and half way through cooking the peppers, I added the squah, zucchini and onions. I also added salt and pepper. I didn't have focaccia bread but I have these sourdough slider type rolls...it was sooo good. And the mayo spread...delish. I want to make this again tomorrow.

I used my electric grill for this and it came out WONDERFULLY. The feta didn't melt too much, but it was just fine once I slapped the veggies on the roll. We did not serve them open-faced (bread was thin enough) and I added mushrooms to the mix-- kinda surprised they weren't a part of it!

I omitted the yellow squash (couldn't find any at veggie store) so added more zucchini (can never have too much grilled zucchini). I also opted against the mayo but will definitely try it at one point. I crumbled the feta, and toasted the bread ever so slightly...piled on the veggies and I must say, I cannot WAIT till tomorrow lunch hour to eat another one of these! This is the BEST sandwich I have ever had. Thank you so much for this Heather!

This was an awesome recipe! My only negative thing to say is that it was very messy, at least for me and my family. Maybe instead of open faced, I would try some kind of roll where the veggies will have at least one side that they wont fall out of!

This is soooooo delicious. Made it as written except added only 1 clove of garlic to 1/4 cup mayo. I also used french bread, split horizontally, some homemade wheat bread, and an extra three yellow squash (I had a bunch). My husband, who doesn't like squash or zucchini, was very skeptical. I put the sandwiches together and then left the room. He decided to take a bite and I heard him exclaim "This is amazing!"
