excellent! we're always grilling veggies but never thought to put them in a sandwich and the sauce and feta was really a great combo! this would work nicely as a wrap too (save some calories) but the focaccia bread was very tasty!

Delicious!!! We made this while it was still too cool out to grill so we spread the veggies out on a cookie sheet and baked them at 350 for about 15 minutes and then slid the bread in (with the mayo and feta on it) and cranked it up to broil for the last 10 or so minutes. The veggies were perfectly tender and slightly golden and the cheese was soft and the bread toasty. We used a hearty cracked wheat bread (heidelberg brand) and it was perfect! I also replaced the fresh garlic with the jarred variety and used extra yellow squash because we didn't have any zucchini. Finally, we replaced the red pepper with a green one and it was just as tasty!! Highly recommended - a great way to spice up your veggies!

I am DEFINITELY going to make this again... x a million. It was so delicious, my meat and potatoes hubby even rated it a 5 and compared it to food we eat at high end restaurants. To top that, my sixteen year old, fast food loving son, said it was awesome.

Great sandwich! I split whole wheat sandwich rolls & used the George Foreman grill. To melt the cheese onto the rolls, I used the microwave. It probably wasn't as good as if I'd grilled over coals, but still a winner.

I made this for vegetarian house guests and it was fantastic. Even my meat-loving husband enjoyed it. Will definitely make this again. Next time, I'll probably try adding some pesto to the sauce to give it a bit more flavor.

The mayo, grilled veggies, and feta are really great on good bread. I used mushrooms and yellow onion, zucchini, and green peppers (what I had on hand) and I broiled them in the oven (dead of winter here). I also melted a slice of swiss cheese over the top of each one. Fantastic flavor.

Wonderful! I added a little salt to the garlic mayo, and let it sit for a few hours in the fridge before making the sandwich. I followed other reviewers advice and tossed the veggies with some balsamic vinegar (along with olive oil). I then baked the veggies in the oven at 400 for 20 minutes. My oven is a little strong, so more time might work for others. I assembled the 2 sandwiches (2 pieces of bread each), wrapped them in foil and put them in the oven for 15 minutes at 350. So good! I will definitely make these again.

I can't believe I had saved this recipe several months ago and never made it. This sandwich is amazing! I didn't change anything on the recipe. All the flavors blend so well together, so if you are planning on making this recipe, make sure you have all the ingredients. I didn't find focaccia bread in the store today, so I used a french baguete. Thank you Heather, I will definitely make this again!

I made some small changes. I roasted the garlic in my toaster oven for the mayo. I couldn't grill since its winter so I cooked all the veggies on the stove in garlic flavored EVOO and threw in some premade Tyson grilled chicken and used jarred roasted sweet red peppers. I also threw the feta into the pan so it would get a little melty. And I put it all into a Spinach wrap with Alfalfa Sprouts. It was super yummy I will make this often with many variations. It would be great with quartered cherry tomatoes and my husband wants to try it with cucumbers as well.

The only reason I am giving this 4 stars is because I was missing some of the ingredients due to location. I also was not able to grill the veggies so I just sauteed them, but it turned out wonderful! It is definitely a keeper!

HANDS DOWN my FAVORITE sandwich! There are so many different varieties of this resipe you can do. I like to add some grilled chicken and also carve out some of the inside of the loaf of bread so all the fillings of the sandwich stay put! SO GOOD!
